Hi Lucy,
You're right. It would be quite bulky if you carry the yarn all the way through. This is a type of knitting call "intarsia". Each section of the patterns has its own little ball of yarn. The main yarn and the pattern yarn are crossover whenever it next to each other.
Here is a good example of a video that show you how to do an intarsia knitting.
